Your appetizer is a refreshing pairing of spring vegetables with Shizuoka whitebait that is sought after for its delicate savory flavor. The seasonal soup is prepared from Yamazato’s signature bonito broth, with velvety minced steamed egg and shrimp perfectly balancing the mild bitterness of mugwort somen. 

The Hassun dishes spotlight our chef’s creativity and expertise in flavor pairings - tender water shield with okra; sweet fish tempura with salted fish guts; and umami-packed crab meat with juicy fruit tomato. Sea urchin which has just come into season in Japan also finds its way to your table in the form of a luxurious topping on your steamed egg custard.
