With a menu that updates regularly to reflect the changing of the seasons, Yamazato’s Kaiseki offers you one of the best ways to explore the beauty of Japan. As the winter season arrives, we proudly introduce the new Shimotsuki Kaiseki that spotlights Japan’s ingredients in their prime including kobako crab and monkfish liver.

To bring out the umami flavor of the Ishikawa kobako crab, Executive Chef Hayashi Hideaki pairs it with apple and grated radish, ensuring that every mouthful is sweet and succulent. Monkfish liver is selected for its rich flavor. To highlight its exceptional quality, the liver is simply steamed with turnip. Persimmon is a winter fruit that is prized of its bright color and sweetness; and dried persimmon makes a perfect match with buttery cream cheese. A precious delicacy, Japanese yellowtail fish imparts a distinct marine sweetness when paired with the aromatic Kujo spring onion, offering a taste of luxury.
