In the realm of Japanese culinary culture, Ishokuya is most popular and a must-go place for foodies. WATAMI garnered its reputation over 40 years in Asia and became a classic representative of Ishokuya by rich variety of dishes, seasonal cuisine, and affableness. Kyo Watami, which just debut in Galaxy Macau, is the first to equip on the specifications of a five-star resort, which requires a high level of quality in terms of ingredients, culinary skills and service.
Kyo Watami takes pride in sourcing the majority of its ingredients directly from Japan, ensuring an authentic Japanese dining experience. The highly recommend Grilled Jumbo Chicken Thigh (MOP 128), featuring tender grilled chicken thigh from Japan and flamed with whiskey at table side to further enrich the aroma, then topped with a secret recipe sauce to enhance the flavour and excite the imagination of the taste buds.
Yakitori, the no-doubt essences of Japanese Ishokuya’s is also something you don’t want to miss in Kyo Watami. Guests may witness chefs at work in sizzling skewers at the yakitori counter. Daily offerings include seasonal shellfish, enabling patrons to select their preferred items for grilling on spot. Each skewer is meticulously crafted with hand-selected, premium ingredients and expertly seasoned daily. Among the most popular choices are Thick Cut Ox Tongue Skewer, Scallop Skewer, Cuttlefish tentacles Skewer, and Chicken Skin Skewer. Various specific skewers are also available for order, such as Chicken Cartilage Skewer (MOP 38), Japanese Chicken Neck Skewer (MOP 38), and Chicken Skin Skewer (MOP 35). Chef skilfully roll up the chicken skin and grill to crispy heaven with succulent, tender interior, offering a delightful contrast texture. The famous "Ichiyaboshi" (overnight dried) is also a must-try item. Originates from the Hokkaido region of Japan, when refrigeration technology was not yet common, local fishermen invented this "pickling and air-drying" method to preserve fresh fish. Fish is first clean and soaked in salt water and air-drying overnight to complete the unique flavor. The finest "Ichiyaboshi" is made from thorn head commonly known as (キンキ), the semi dried fish has a firmer texture and richer flavour compare to the fresh fish. The best way to cook is by slow roasting, and the rich fat of the fish meat will gradually seep out, giving it an aromatic flavour.
The sashimi assortment is of the freshest grade, with ingredients comparable to fine dining Japanese restaurants, emphasis on seasonal seafood, including tuna, yellow tail, sweet shrimp, scallop and a variety of top-quality sashimi. Born in the town of Bergamo in Lombardy, Northern Italy from an Italian culinary family, the master of culinary art, D'Antonio, demonstrated extraordinary culinary philosophy immediately after graduating from the renowned Culinary Institute of S. Pellegrino. He crafted a culinary masterpiece at the Italian Restaurant aboard Sliversea’s luxurious vessel, Swire Hotels, Shangri-La, and sparked 7 years partnership at Opera Bombana, Beijing with the three Michelin-starred chef Bombana. In 2020, he unveiled at GIADA Garden and earned the prestigious Michelin Star this year and 2 forks from Gambero Rosso International. D'Antonio has been staying in China more than 18 years, he loves to use finest and seasonal local ingredients in his creative, simple and elegant works.
“The Macallan·Terrazza Michelin Harmony Tasting Dinner” showcases six courses and three unique selection of The Macallan whiskies. The guest chef menu is a special menu as an introduction of his signature works and passions in culinary area, one of the highlighted dishes is GIADA Garden signature “Handmade Gnocchetti, Boston Lobster and Bottarga”.
