Celebrating the month of festivities, Chef Hayashi has specially designed a Mutsuki menu spotlighting the beautiful winter ingredients of Japan. 

The extreme cold gives rise to the most delicious seafood. On the menu you will find plump, sweet scallops and the “foie gras of the sea”, buttery monkfish liver which is especially flavorful during the cold season. The winter delicacy, Spanish mackerel, is another must-try. By gently grilling it with yuzu sauce, the tender mackerel crisps up to offer you a real taste of luxury. 

Also in season are winter fruits and vegetables including Sanbokan orange, yuzu and canola flower — all prepared under the expert hands of our chef. In addition to fresh sashimi of the day, you can also enjoy the famous wagyu from Saga province, served with onion, cabbage and carrot to introduce a hint of freshness to the richly marbled beef. 

This sumptuous menu is a display of exceptional artistry and is the perfect way to ring in the New Year.
