Honored with the Chevalier de l’Ordre du Mérite Agricole for his contribution to wine culture, Hervé Pennequin leads the wine program at Galaxy Macau.
With over four decades of experience in restaurants around the world—including three-Michelin-starred establishments—Hervé’s journey is marked by rare distinction. He claimed the French national title of Best Young Sommelier at 23, and went on to be named 3rd Best Sommelier of the World fifteen years later.
His impeccable command of wine and food pairing is shaped by a lifetime of travel and a keen appreciation for terroir and technique.
With Hervé at the helm, the Galaxy beverage team curates journeys of flavor that transcend borders—each pairing thoughtfully composed to elevate every cuisine, every palate, and every moment at the table.
Timothy Chan grew up in Macau and, after graduating with a degree in Hotel Management from Switzerland, accumulated extensive international culinary experience in Shanghai, Brisbane, and Taipei. His background in Michelin-starred, Black Pearl, and Chef Hats restaurants contributes to his solid foundation in global cuisines. He holds the highest SSI International Sake Sommelier certification—Master of Sake (Sakasho), as well as the Court of Master Sommelier—Certified Sommelier. He is currently pursuing the WSET Level 4 certification. He won second place in the ASPI Italian Wine China Best Young Sommelier Competition 2019 and was shortlisted for the finals of the China Sake Sommelier Competition 2024.
Driven by a passion for wine and gastronomy, Kan acquired knowledge related to spirits, whisky, and mixology by working with wine suppliers and restaurants in Macau. During his tenure at GEG, he has organized and hosted whisky masterclasses, overseen bartending responsibilities across multiple Galaxy bars, and eventually rose to his current role as Beverage Manager. His professional credentials include WSET Level 3 Awards in Wines and Spirits, and Sommelier of Sake (Kikisake-shi) by SSI International.
Well-versed in both wine and sake, Ivan serves as sommelier of the Michelin-starred restaurant Sushi Kissho by Miyakawa and Teppanyaki Shou of Raffles at Galaxy Macau, bringing over a decade of experience in wine curation. His professional credentials include WSET Level 3 Award in Wines, as well as Master of Sake (Sakasho) and Sommelier of Sake (Kikisake-shi) from SSI International.
Timothy’s experience at Hong Kong’s acclaimed two-Michelin-starred Chinese restaurant and a Japanese fine-dining establishment has honed his expertise in wine and food pairing. He holds the WSET Level 3 Award in Wines and the Introductory Sommelier Certificate from the Court of Master Sommeliers.
To deepen her expertise in wine, Julia has obtained the CMS Certified Sommelier credential, the WSET Level 3 Award in Wines, and the Level 3 Chinese Baijiu Tasting Certification. She is dedicated to exploring the interplay between Chinese cuisine and diverse beverage selections, creating pairing expressions that align more closely with Chinese flavors. She is Sommelier of Pak Loh Chiu Chow Restaurant at Galaxy Macau.
After graduating from the Swiss Hotel Management School, Jojo honed his craft in Tokyo and Osaka and earned multiple professional certifications from prestigious institutes, including CMS and WSET. As sommelier of 8½ Otto e Mezzo BOMBANA, Galaxy Macau’s Michelin-starred Italian restaurant, he curates the wine list, develops pairings, and orchestrates wine dinners—revealing the true pleasures of wine beyond price or prestige.
Julie has been awarded Sommelier of Sake (Kikisake-shi) by SSI International and is pursuing the WSET Level 4 certification. She began her journey as a sommelier at a Chinese restaurant. Her expertise in Italian gastronomy deepened as sommelier of Galaxy Macau’s Michelin-starred Italian restaurant—8½ Otto e Mezzo BOMBANA. She is passionate about discovering exceptional wines from lesser-known, independent producers.
Mention holds the WSET Level 3 Award in Wines and the CMS Introductory Sommelier Certificate. As Sommelier of The Apron Oyster Bar & Grill, he delights in crafting inspiring pairings while sharing his deep knowledge of German Riesling with guests.
With 13 years in the culinary industry, Flora’s experience spans Spanish, Italian, Chinese, and fusion cuisines. She began her career as a mixologist at a French bistro and advanced through five-star hotels and Michelin-starred restaurants, before stepping into her current role as Sommelier of House of Origin. Flora is a Certified Sommelier of the Court of Master Sommelier and holds the WSET Level 3 Award in Wines.
